To take a models arms you want, you'd have to extract the .mdl, .vvd, .sw.vtx, .dx90, and .dx80.vtx arm files using Gmad. Once done, place those same taken arm files into whatever player models "models/player" file you want. Once placed, go into the playermodels LUA folder and you'd see something like this in it.
