I’ve got both traction and stability control enabled. I'd say disable the assists and dial in a custom tune yourself. Try a FWD car and see if the same thing happens. Oversteer should be a car issue, not your steering wheel. It's pretty easy to fix with race sway bars and adjustable suspension.

There are multiple threads and a lot are having this issue with a bunch of different wheels but only FH5, no problems with FH4. Thrustmaster told me last Friday they are getting a lot of complaints and they felt it was the FH5 update Thursday as wheel worked fine on Wednesday.
