I've intentionally delayed putting up defense towers, automated guns, etc and mobs have remained relatively small and pests not as powerful. There will be stronger mobs eventually, but there does seems to be some calculation to mob size & strength based upon your current defense strength.
Cooked meals spoil in a couple of days, so have only 1 meal per survivor premade (you can set the kitchen stove to have someone cook veggie soups until you have 3 or 4).
